Peaches & Cream!

Summertime means that there is fresh produce throughout all grocery stores! I get most excited about all of the fresh peaches! They come in so many different varieties and work great in desserts. This time around, I had to combine three of my favorite things: peaches, biscuits, and ice cream!

My Caramelized Peaches & Biscuits are the perfect desserts for this summer weather! Topped with vanilla ice cream, this dessert is sure to please!

TIPS FOR MAKING THE BEST BISCUITS

So, if you love biscuits as much as I do, you know that they can be tricky to make at times.

I like biscuits that are mile-high, flaky, and buttery! Below are a few of my favorite tips to make the best biscuits.

  • Cold Ingredients are Key!

  • Allow the Biscuits to Rest.

  • Use a High Temperature.

Caramelized Peaches & Biscuits’ Ingredients

The ingredients are pretty simple in this recipe; but, let’s still walk through them to understand them! You find pretty much all of these ingredients at your local grocery store. Get those fresh peaches while you can!

  • All-Purpose Flour: The flour acts as the binder for the biscuits. It is one of the main ingredients that will help create and stabilize the biscuits. For this recipe, there is no need to sift the flour.

  • Baking Powder: You always need some form of leavener for baked goods. The baking powder makes these biscuits rise really high! The way that they initially puff up in the oven is crazy.

  • Salt: I added a little salt into the recipe to add some additional flavor to the biscuits. Be careful though. Too much salt will make the biscuits overly salty which is not the goal at all. A little salt in baked goods always goes a long way. 

  • Sugar: The sugar helps to balance out the saltiness from the kosher salt and the salted butter. You can taste a hint of sweetness after you taste the inside of the biscuits. But, it is only a slight taste. 

  • Butter: You need some type of fat component whenever you are making a baked good. Butter or shortening are some of my favorite fats to use for biscuits. They help to form flaky layers throughout the biscuits. I also used a few tablespoons of butter in the caramelized peaches to make them taste even better!

  • Buttermilk: Buttermilk is probably my favorite dairy ingredient to use for biscuits! It is full of fat and extra flavor. This is the only wet ingredient you will be using for the recipe. If you cannot find buttermilk, take regular whole milk or half & half and add 1 - 2 tbsp of white or apple cider vinegar.

  • Egg: The egg is used for a simple egg wash (egg plus buttermilk) that goes on top of the biscuits before they go into the oven. The egg wash helps to give the biscuits a golden brown color. 

Caramelized peaches:

  • Fresh Peaches: The summertime means that there is an abundance of fresh peaches around! The amount of flavor in a fresh peach is crazy! For this recipe, I used ripe but firm peaches. They easily hold their shape without compromising their flavor.

  • Brown Sugar: I used brown sugar as my main sweetener for the caramelized peaches. The extra molasses flavor in the brown sugar worked great with the peaches. It was really similar to eating peach cobbler!

  • Bourbon: Ever since I tried combining peaches with bourbon, I have never gone back! The flavors work so well together! I used a simple Kentucky bourbon. It is totally optional, but I highly suggest it!

  • Ground Cinnamon: The ground cinnamon added some additional warmth to the peaches. I only added about 1 tsp just to enhance the taste of the peaches. I did not want to overpower them with too much.  

  • Fresh Thyme: The fresh thyme added some additional herbaceousness to peaches. It has a slightly sharp and almost minty taste which worked really well with the peaches. 

  • Kosher Salt & Fresh Lemon Juice: To balance the sweetness of the peaches I had to add a small amount of lemon juice and kosher salt. A small amount of both really brought out the flavors of peaches.

  • Vanilla Ice Cream: The vanilla ice cream was the icing on the cake for this recipe! The warm peaches and biscuits combined with the cold and rich ice cream were phenomenal! Some vanilla bean gelato would go great with this as well!

How to make Caramelized Peaches & Biscuits

I never knew how much I liked peaches until I had a REAL peach cobbler! Surprisingly, peaches were not one of my favorite fruits. But, this recipe right here really solidified peaches as one of my favorites!

The full written recipe is below, but here’s an overview.

  • STEP 1: Always Preheat the Oven First! Heat the oven to 400° F. Line a baking sheet with parchment paper or spray with nonstick baking spray. Hold the pan for later use.

  • STEP 2: Prep the Dry Mixture. In a large bowl mix together flour, baking powder, salt, and sugar. On the large hole side of a grater, grate the cold butter into the flour mixture. Then, with a fork or pastry cutter, cut the butter into the flour mixture.

    The finished product should look like coarse crumbs. You can also do this by adding the butter and flour mixture into a food processor. Pulse the mixture until it reaches the desired consistency.

  • STEP 3: Add the Buttermilk. Add 1½ cups of cold buttermilk into the mixture. Mix with your hands or a wooden spoon. When the dough begins to form, move to a floured surface. Mold the dough into a ball. If necessary, add more flour to the surface to keep the dough from sticking. Make sure not to overwork the dough.

  • STEP 4: Fold the Dough. With a rolling pin, roll the dough into a rectangle that is ¾ of an inch thick. Fold the dough in half and roll the dough back into the larger square. Repeat the process two more times adding more flour when necessary.

  • STEP 5: Cut the Dough. With a biscuit or cookie cutter, cut the biscuits. Gather the remaining dough and flatten again to cut more biscuits. Transfer the biscuits to the lined sheet pan and refrigerate for 15 minutes. While the biscuits are resting, make the egg wash by mixing 1 egg and the remaining buttermilk together.

  • STEP 6: Bake the Biscuits. Brush the biscuits with the egg wash and bake for 17 - 20 minutes or until golden brown and flaky. Remove the biscuits from the oven and allow them to cool.

  • STEP 7: Saute the Peaches. In a large cast-iron skillet or saute pan, heat 2 tbsp of butter on medium-high heat. When the butter is hot, add the peaches and allow them to brown on both sides (about 2 - 3 minutes on both sides.

  • STEP 8: Add the Remaining Ingredients. Add the brown sugar, bourbon, thyme, kosher salt, and lemon juice. Mix the peaches with the rest of the ingredients making sure to not break the peaches apart. Allow the mixture to simmer for 4 - 5 minutes or until slightly thickened. Remove from the heat.

  • STEP 9: Assemble the Biscuits. Slice the biscuits in half. Fill the biscuits with the caramelized peaches. Top with vanilla ice cream and the other halves of the biscuits. Serve immediately and enjoy!

Can I make this recipe ahead of time?

Yes! You can definitely make this dessert ahead of time! I suggest making your biscuit dough the night before you plan on baking them. Cut and allow them to rest in the refrigerator overnight.

Bake the biscuits the next day. You can also make your caramelized peaches the night before. Cool them down properly and reheat them the next day. Serve according to the recipe and enjoy!
