Let’s Have Dessert First!
It’s something about this time of year that makes me want to completely give up on any diet or meal plan that I have had in place. I then quickly think back to having to buy new clothes because the old ones do not fit. But, as you all know, over here we love to indulge every now and again.
I have loved anything sweet since I was kid. I didn’t get seven cavities at once from eating carrot sticks. I have definitely gotten better over the years, but this recipe right here brings out that little kid in me. My Snickerdoodle Cheesecake Parfaits will have your mouth watering! They are the perfect dessert for any occasion.
What are Parfaits?
Parfaits are a simple dessert that actually originated in France. The word parfait means perfect in French. The dessert was originally made up of a homemade custard, sugar syrup, fruit, and whipped cream. The ingredients were perfectly layered and put into glasses. Parfaits are an eye catching dessert. Each ingredient is meant to be seen through the glass. They look so good that you don’t want to mess them up!
Over the years, parfaits have evolved tremendously. The combinations of ingredients that people have come up with are amazing. When planning out this recipe, I decided to combine two of my favorite desserts, Snickerdoodles and Cheesecake.

SNICKERDOODLE CHEESECAKE Parfait Ingredients
For this recipe you will need the following simple ingredients:
Cream Cheese: This is the base of the filling. You cannot have cheesecake without cream cheese. Make sure that is room temperature and softened. Please get quality cream cheese as well (Do not be cheap.) This will make it a lot easier to mix. A hand or standing mixer is ideal for this recipe.
Marshmallow Fluff: The marshmallow fluff aids in creating the fluffy texture in the filling. It is also the main sweetener in the filling. When whipped the cream cheese, it should look like frosting.
Vanilla Extract: The vanilla adds some extra flavor to the filling. It also gives the filling a cream color resembling that of a real cheesecake.
Snickerdoodles: The Snickerdoodles add the crunchy texture to the dessert. It acts as the graham cracker crust that most cheesecakes have, but better. Make sure to not over crush the cookies.
Caramel Syrup: The caramel syrup is the added bonus! It makes the dessert even richer. Plus the color of syrup plays well with the ingredients. It adds another contrasting layer to the parfait.

How to make Snickerdoodle Cheesecake Parfaits
Step 1: Make Cheesecake Filling. Cut the cream cheese into cubes. With a hand or standing mixer, mix the cream cheese until fluffy. Add in the marshmallow fluff and vanilla extract. Mix until fluffy.
Step 2: Allow Cheesecake Filling to rest. Add the filling to a Ziploc or pastry bag. Allow the fling to rest for 10 - 15 minutes in the refrigerator.
Step 3: Crush the Cookies. In a plastic bag, crush the Snickerdoodles. Do not turn the cookies into dust. You want medium to large chunks of cookies.
Step 4: Assemble the Parfaits. This is the fun part. Begin to layer the parfaits in glasses or mason jars in the following order: crushed cookies, cheesecake filling, caramel syrup. Repeat this order until the glasses or mason jars are full.
Step 5: Decorate. Top the glasses or mason jars with whipped cream and cinnamon. Add a piece of one of the cookies to the side for a little garnish if you like. Serve and enjoy!
Can I make these Parfaits Ahead of Time?
Yes and No. You can definitely prep the parfaits ahead of time. The filling can be made at any time and chilled in the refrigerator for later use. The cookies can also be crushed and left in a Ziploc bag.
I would recommend assembling the parfaits on the day that you plan on eating them. When the parfaits are left sitting, the crushed cookies will get soggy. The good thing is that they are easy to assemble the day of! Get creative with them as well!
