My Version oF an Old memory
The Fall Season cannot begin without a Grilled Cheese involved! Grilled Cheese Sandwiches have come a long way over the years. There are restaurants out there that are just dedicated to custom gourmet grilled cheese sandwiches! A grilled cheese sandwich can make almost anyone happy!
So, I had to make my own version of an old grilled cheese sandwich that is very close to my heart. My Buffalo Chicken Grilled Cheese Sandwiches are packed with melty cheese, spicy buffalo tenders, bacon, basil, and toasted Texas Toast! Trust me, you will never go back to a regular grilled cheese again!
A real Throwback
I love a good grilled cheese sandwich just as much as the next person, but it’s nothing like switch-up! Back when I was in college, there was one meal that I can remember getting on a weekly basis during my freshman year. That meal was a Kickin Chicken Grilled Cheese with French Fries! This meal is probably one of the reasons I gained the Freshman 15.
The sandwich was two buffalo chicken tenders topped with ranch or blue cheese and stuffed between two slices of Texas Toast and 2 slices of Pepper Jack Cheese. The sandwich was then pressed on the grill until golden brown. I’m surprised I didn’t get heartburn from eating these so much. But, it is a sandwich I will always remember! So, I had to recreate it with my own little twist!
Buffalo Chicken Grilled Cheese Ingredients:
This recipe combines so many simple ingredients into such amazing sandwiches. The ingredients can be found in pretty much any store too which is even better!
Some of the ingredients are probably sitting in your refrigerator waiting to be used.
Buffalo Sauce:
Hot Sauce: You’re definitely going to need some hot sauce for this recipe. It’s one of the main components of the homemade buffalo sauce. I always go for Louisiana Hot Sauce but feel free to use your favorite hot sauce brand.
Butter: The butter gives buffalo sauce a slight creaminess and velvety texture. Salted or unsalted butter will work for this recipe. I prefer to use salted butter for the extra flavor it adds to the sauce.
Vinegar: Vinegar adds some additional acidity to the buffalo sauce. But, the fat butter does cut the acidic taste. Either white or apple cider vinegar can be used for this recipe.
Onion & Garlic Powder: I had to add two of my favorite seasonings to this recipe. Onion and garlic powder add the flavors that I want without going through the hassle of cutting actual onions and garlic.
Cayenne Pepper: To add some additional heat and spice, I added just a small amount of cayenne pepper. Cayenne pepper is already in the hot sauce, but a little extra heat is always good in my book!
Worcestershire or Soy sauce: To add some savoriness and umami to the sauce, I decided to add some Worcestershire sauce. It is rich in taste and adds to the overall mouthfeel of the sauce. If you don’t have Worcestershire sauce, soy sauce is a great substitute.
Sandwiches:
Butter: If you’re making grilled cheeses the old-fashioned way, you need some butter in your pan! The butter is going to give you golden bread and crispy edges. Make sure to not let the butter burn. You don’t want burnt grilled cheese sandwiches.
Texas Toast: Since this is a recreation of an old classic for me, I had to stick with the original Texas Toast. It’s thick enough to hold the many components of this sandwich. Plus, it’s buttery and soft!
Cheese: Each of these 4 sandwiches has 4 slices of cheese. The original sandwich just had Pepper Jack Cheese which was delicious. But I decided to add some American Cheese slices for extra cheese pull. Cheddar Cheese slices will work as well.
Bacon: Since I believe bacon makes everything better, I had to add some to this grilled cheese recipe. It added some smokiness to the sandwich. I couldn’t get enough of it!
Fresh Basil Leaves: Adding some fresh basil leaves to this sandwich was something I added last minute to this recipe since I had a lot on hand. It ended up turning out crazy good! The basil added a little extra unexpected flare to the sandwich. However, it is totally optional.
Chicken Tenders: To make life easier, I bought some fully cooked frozen chicken tenders. I highly suggest using a brand that you trust. But, feel free to make your tenders from scratch. The sandwich will taste even better.
Ranch or Blue Cheese Dressing: Since ranch and blue cheese go so well with anything buffalo, I had to add some to the sandwich. Plus, the original sandwich had a few drizzles on it. This is totally optional as well. It does, however, help to cut the spiciness of the sandwich.
How to Make A Buffalo Chicken Grilled Cheese
Now that we understand what goes into the recipe, let’s get started! The great thing about this recipe is how easy it is to make!
This sandwich brought back so many memories of my college days. I couldn’t get enough of them!
The full written recipe is below, but here’s an overview.
STEP 1: Prepare the Buffalo Sauce. In a small saucepan combine the hot sauce, butter, vinegar, onion powder, garlic powder, cayenne pepper, Worcestershire, or soy sauce. Bring the mixture to a simmer on medium heat and allow the sauce to cook for 7 - 10 minutes mixing occasionally.
STEP 2: Prepare the Chicken Tenders. As the sauce is cooking, heat the prepared chicken tenders. In a large bowl, toss the chicken tenders, in the buffalo sauce making sure to leave a little extra for drizzling.
STEP 3: Assemble the Sandwiches. Begin assembling the sandwiches in the following order:
On one slice of Texas Toast and 2 slices of Cheddar or American cheese.
Top the cheese with 2 slices of bacon, 2 buffalo chicken tenders, and 2 basil leaves.
Drizzle the tenders with ranch or blue cheese dressing (optional).
Add 2 slices of Pepper Jack Cheese on top.
Top the sandwich off with one more slice of Texas Toast. Repeat this process for each sandwich.
STEP 4: Prep your Skillet or Panini Press. In a medium-sized skillet or panini press, melt 1 - 2 slices of butter on medium heat. When the butter is melted add the sandwiches one at a time.
STEP 5: Grill or Press the Sandwiches. Let the sandwiches cook on each side, flipping when necessary until the bread is golden brown and all the cheese has melted.
STEP 6: Remove the Heat, Slice, and Serve! Once the sandwiches are done cooking, remove them from the heat. Slice the sandwiches in half and serve with some extra buffalo sauce and ranch or blue cheese dressing.

With Fall coming around, I love a quick grilled cheese sandwich! It’s pure comfort food to me! To make these sandwiches even better, I like to eat them with 1 or 2 other dishes that are equally as delicious! Here are a few options that will be great with these sandwiches:
