CRISPY, SOFT, AND DELICIOUS

No matter the time of day, potatoes are ALWAYS good! Whether it’s hash browns, French Fries, or chips, potatoes can make your day even better. Now, eating them all of the time is not recommended at all. But, for the times that you do eat them, make sure that they are delicious! Potatoes are a go to side dish that are pretty impossible to mess up. All you need is some good seasonings, a little fat, and the right temperature. With the right combo, you will be in spud heaven. My Garlic & Parmesan Roasted Potatoes are sure to knock your socks off!

POTATOES, POTATOES, POTATOES

There are thousands of different potato varieties throughout the world. However, the ones that most people typically see are Yukon Gold, Fingerling, Red, White, and Russet potatoes. When roasting, I typically go for the Fingerling and Red potatoes. They hold their shape very well throughout most cooking methods. They work especially great if they are going to be parboiled. Parboiling or steaming your potatoes, and cooling them properly will help speed up the roasting process. I prefer to leave on the skin as well. The skin crisps up so well in the oven, but feel free to peel the potatoes if you like!

ROASTING THE SPUDS

When it comes to roasting, you always want to make sure that you are using the correct temperature. The beautiful browning that you see on potatoes, turkeys, vegetables, etc. comes from the right amount of fat and a high temperature. The temperature also differs depending on the type and size of the item being roasted. In the case of the potatoes, stay between 400 and 425 degrees. Vegetable, Olive, and Canola oils are go-to oils for roasting. Nine times out of ten you have one of these types of oils in your pantry. If you choose anything lower you’ll have to cook your potatoes longer. The best way to check if the potatoes are done is to pierce with a fork or knife. The knife or fork should easily slide off. The outside of the potatoes should be crispy and golden; and, the flesh should be hot and soft

The good thing about roasting potatoes is that they take minutes to fully prep. All you have to do is throw them in the oven and turn them occasionally for even browning. When prepping, make sure to scrub your potatoes in cold water. Make sure all of the dirt and residue is gone. This might sound like common sense, but common sense is not so common anymore. If you plan on roasting the potatoes on a different day, submerge the sliced potatoes in cold water and refrigerate. This will keep the potatoes from browning and going bad. Once you are ready to roast, it’s just a game of mixing everything together.  

IT’S SO EASY!

This recipe is simple and easy! It can be made by pretty much anyone who can turn on an oven, and mix ingredients in a bowl. When you can’t think of anything else to make, make some potatoes! If you want a healthier option, try this recipe with sweet potatoes! The savory sweet potato is something that some of us might not be used to. But, the right flavors can make anything taste great!
