EASY Bananas Foster Pancakes

During these winter months, sometimes I want something decadent. I want it to stick to my ribs. The foods that I know I shouldn’t eat are the ones that I crave the most. But, it was definitely a time to indulge. Plus, I had an abundance of one of the main ingredients left in my house, bananas.
A simple and easy pancake recipe with a New Orleans classic dessert makes this a dish to remember! My Easy Bananas Foster Pancakes Recipe will make you feel like staying in bed all day just to relax. They are quick and easy to make; but, most importantly, they’re delicious!
Where did Bananas Foster Come From?
When most people of Bananas Foster, they usually associate it with a nice helping of ice cream. But, why limit it just to ice cream. Adding this famous dessert to a stack of pancakes makes this the perfect brunch item. This iconic dessert originated from New Orleans, Louisiana. The dessert was made in the 1950s by one of the most famous families in the food industry, The Brennan Family. Bananas Foster Ingredients
Although you want to make sure you have light and fluffy pancakes for this recipe, the Bananas Foster topping is the star of this recipe. For the topping, you will need the following ingredients:
Bananas: I used bananas that had just turned ripe for this recipe. Just ripe bananas have just enough sweetness. But, they will also hold their shape when added to the hot sugar sauce.
Salted Butter: The butter adds just the right amount of fat content and salt to the sauce. The brown sugar is cooked into the melted butter creating a creamy caramel texture.
Brown Sugar: Either light or dark brown sugar will work for this recipe. Dark brown sugar has a higher molasses content which will intern create a darker more rich sauce. But, either will make a delicious sauce.
Rum: The rum adds flavor and the right amount of kick to the sauce. The alcohol is cooked off in the sauce, but leaves a great taste. I suggest using spiced rum for this recipe. It will make the sauce slightly robust and compliment the sweetness (Rum Examples: Captain Morgan, Navy’s Bay, Myers’s Dark)
Vanilla Extract: The vanilla extract adds some extra flavor to the sauce sauce. Plus, vanilla and bananas go great together!
Cinnamon & Nutmeg: The spices add some extra warmth to the dish. They give a nice contrast to the overall sweetness of the dish as well.
Nuts: Typically, you will see chopped walnuts with this dish. I decided to use chopped pecans just to switch it up a little. The nuts add some additional texture to the dessert.

How To Make Bananas Foster Pancakes
To make these Easy Bananas Foster Pancakes, follow the simple instructions below:
Make Wet Mix. Whisk milk and vinegar in a bowl to make buttermilk. Buttermilk makes pancakes even richer in my opinion. Add eggs, melted butter, and vanilla. Whisk the ingredients together. You could also buy the buttermilk.
Make Dry Mix. Combine dry ingredients in another bowl and whisk. Whisking will incorporate air into the dry ingredients.
Combine the mixes. Slowly add the wet ingredients into the dry ingredients. Whisk the ingredients together until combined. Do not over mix. The batter should be slightly lumpy.
Prepare to make the pancakes. Heat a skillet or griddle on medium heat (around 350 degrees) with non-stick spray or vegetable oil. Use about ⅓ to ¼ cup of batter per pancake. Flip the pancakes when the bubbles begin to form and pop. The pancakes should be golden brown.
Make your Bananas Foster. Grab another skillet or use the same one used for the pancakes. On medium heat, melt the butter. Add in the sugar, vanilla, rum, cinnamon, and nutmeg. Whisk ingredients together and allow them to bubble.
Add pecans or walnuts and sliced bananas. Toss the walnuts and bananas in the mixture. Remove from heat when the bananas are fully heated. The mixture should be shiny brown in color.
Assemble the dish. Layer the mixture with the pancakes. Top with extra bananas and pecans. Serve and enjoy!
Tips & Tricks
Here are some of tips and tricks to help you make the best pancakes:
Buttermilk is always a great addition to pancakes. The pancakes will get some extra richness and extra fluffy.
Do Not Overmix! Over mixing the batter will create flat and dense pancakes. The batter should always be slightly lumpy.
Making a well, or opening in the middle of the dry ingredients before adding the wet ingredients will help with mixing. The batter won’t be overmixed if all of the wet ingredients are added at once.
Always use a nonstick pan or griddle for easy clean up.
Try using a cookie scooper. This will make uniform pancakes.
