Lately, all of this warm weather is making me want all sorts of fresh ingredients. I want to be somewhere in the Caribbean sitting on a white sandy beach soaking up the sun. But, for right now, a meal filled with fresh flavors will do!
My Pineapple Teriyaki Pork Recipe literally made my day! With succulent pork, sauteed veggies, and a sweet and savory pineapple teriyaki sauce, I was in heaven! I made it all in such a short amount of time. It is perfect for those days where you want something different but still simple to make.
Pork Cooking 101
Now I know that people do not eat pork for various reasons (i.e. religious, health, etc.). Of course, eating pork is totally up to you. If you do not, chicken or shrimp will be just as good with this recipe. My biggest issue with pork is that a lot of the time, it is overcooked.
Pork can get dry very fast. It can become even drier depending on what cut and cooking method you choose. Pork should only be cooked to 145° F internally. Having a digital thermometer on hand in your kitchen is always a great idea.

Pineapple Teriyaki Pork Ingredients:
The ingredients are pretty simple in this recipe; but, let’s still walk through them to understand them.
This recipe is full of fresh and bright flavors! The sauce really sets this recipe off! I couldn’t get enough of it!
Pork: For this recipe, I suggest using a small pork loin roast. The loin roast is a larger cut of the loin. It has just the right amount of fat which made the pork very tender. I cut it into 1½ to 2-inch cubes.
Kosher Salt & Ground Black Pepper: Salt & Pepper are essential! These two are the base of the seasoning for the pork. You want to make sure to season the pork well. Have some more on hand to season to taste at the end.
Paprika: I added some paprika for some added smokiness. If you have smoked paprika, that is even better! Plus, it adds a nice red color to the pork when you sear it.
Onion & Garlic Powder: I put these two seasonings in about everything I make. If you do not have any other seasonings in your house, onion and garlic powder are a must! They add so much extra flavor.
Cooking Oil: I suggest using EVOO, vegetable oil, or grapeseed oil to marinate and cook the pork. You only need 2 oz to marinate the pork and 1 tbsp to sear.
Yellow Onion: The onions add some extra flavor and texture. I suggest using regular yellow onions or even Sweet Vidalia Onions. The sweet onions would go perfectly with this dish since it is more on the sweeter side.
Bell Peppers: The peppers add some added texture as well. I roughly chopped them to make the dish more rustic. Using multi-colored peppers would add some great contrast to the overall dish.
Pineapple: The pineapple chunks and juice really make this dish shine! It helps balance the savory sauce. Pineapple and pork are also a great combo. The flavors mesh beautifully together.
Soy Sauce: The soy sauce adds saltiness and umami to the teriyaki sauce. I used regular soy sauce. But, low sodium soy sauce will work just as well.
Brown Sugar: I add the brown sugar for some added sweetness in the sauce. Its added molasses flavor works great with pineapple juice and chunks.
Minced Garlic: Garlic goes great in everything! It adds the perfect touch to any dish or sauce. Plus, it adds some texture to the sauce.
Ground Ginger: I used ground ginger for this recipe. It will easily dissolve in the sauce. But, fresh ginger will work just as well! I suggest using about 1 tbsp of fresh ginger.
Cornstarch Slurry: The cornstarch slurry is made up of 2 tbsp of cornstarch and 2 tbsp of cold water. This will thicken the teriyaki sauce just enough. Make sure to add it when the sauce is at a rolling boil.
How to make Pineapple teriyaki pork
Now that we understand what goes into the recipe, let’s get started! The great thing about this recipe is how easy it is to make!
The main star of this recipe is the sauce. It goes great with so many different proteins, especially if you do not eat pork.
To me, this recipe is even better the next day! The pork has a chance to sit in the sauce and absorb more of its flavors. Plus, it can be made ahead of time! If you meal prep, this is a great recipe.

Step 1: Season & Marinate the Pork. In a large bowl combine the pork cubes, kosher salt, ground black pepper, paprika, onion powder, garlic powder, and cooking oil. Mix the ingredients together. Allow them to marinate in the refrigerator for 10 minutes.
Step 2: Make the Sauce. While the pork is marinating, combine the soy sauce, pineapple juice, brown sugar, minced garlic, and ground ginger in a small saucepan. Allow the mixture to come to a boil and reduce by ¼ (about 5 - 7 minutes).
Step 3: Thicken the Sauce. Combine the cornstarch and cold water to make a slurry. When the sauce is at a full rolling boil, add the slurry and mix. Allow the starch to fully cook out of the sauce (about 2 - 3 minutes). Remove the sauce from the heat and hold it hot for later use.
Step 4: Sear the Pork. Heat a large saute pan or skillet with a tbsp of cooking oil on medium-high heat. Brown the pork cubes. Cook the cubes until they are close to half of the way cooked. Remove the cubes and place them in a bowl.
Step 5: Saute the Vegetables. While still on medium-high heat, add the onions and peppers. Saute until soft (about 4 - 5 minutes). Add the pork cubes back into the pan and mix.
Step 6: Add the Sauce & Pineapple Chunks. Mix in the teriyaki sauce and pineapple chunks. Turn the heat down to medium. Allow the pork to cook in the sauce until it reaches 145° F internally. Make sure to mix every so often for even cooking.
Step 7: Season to Taste & Serve! Season to taste with kosher salt and ground black pepper. Remove from the heat and serve with your choice of side dish. Enjoy!
