Cajun Salmon BLT
A delicious pan-seared Cajun salmon filet with bacon, lettuce, tomato, and avocado on a soft brioche bun. Paired with homemade spicy mayo, this sandwich will knock your socks off!

It is nothing like a good sandwich to make your day great! Now when it comes to sandwiches, there are endless possibilities. Pretty much anything that you like can be made into a sandwich. From toppings to spreads, sandwiches will never disappoint!
For me personally, the Classic BLT takes the cake! But, for this recipe, I wanted something different. After brainstorming for a while, I came up with this amazing Cajun Salmon BLT Sandwich with a Homemade Spicy Mayo! What could be any better?
WHY CHOOSE A BLT?
This recipe comes with a delicious pan-seared Cajun salmon filet with bacon, lettuce, tomato, and avocado on a soft brioche bun. Paired with homemade spicy mayo, this sandwich will knock your socks off! Oh, and everything is better with bacon!
If you do not eat pork or meat in general, there are definitely some vegetarian and vegan options that can be substituted for this recipe (i.e. carrot bacon, eggplant bacon, vegan smoked salmon).
The BLT sandwich is an all-around favorite! The stacked ones are the best! The BLT sandwich can be a hearty lunch option or a light dinner. Whenever you eat it, it will be delicious! If you are in a rush this is a great go-to meal option. Plus it can be very filling.
Cajun Salmon BLT Ingredients:
The thing that also makes this recipe amazing is that there are very few ingredients. Some of the ingredients are probably sitting in your refrigerator waiting to be used. Let’s take a look!
BACON: Thick-cut crispy bacon adds a smoky and salty flavor to the sandwich. Make sure to cook the bacon in the oven. It makes the cooking process so much simpler and easy to clean.
LETTUCE: The lettuce or greens choice is totally up to you (i.e. bibb, arugula, romaine, etc.)! Lettuce adds some crunch to the recipe. Since lettuce and greens are made up of mostly water, they also make the sandwich refreshing. In this recipe, I chose arugula which can be slightly bitter. However, it pairs so well with the spiciness of the salmon fillet.
TOMATOES: Fresh ripe tomatoes are needed for this recipe. They also make the sandwich refreshing from their water content and acid (i.e. Roma or Big Beef Tomatoes).
BREAD: Pretty much any bread will work for this BLT. I used a Brioche bun because they are soft and buttery. With any bread you choose, just make sure it is toasted! Toasting the bread will make the sandwich even better.
AVOCADO: Now for some additional flavor and creaminess, I added some avocado slices. Avocados are nutrient-dense and full of monounsaturated fats. Make sure that the avocados you choose are almost fully ripe. Scoop the fruit out of its peel and slice.
SPICY MAYO: This spicy mayo has just the right amount of spice balanced with acid. It adds creaminess to the sandwich with a lot of additional flavors.
How to Make a Cajun Salmon BLT
Now that we understand what goes into the recipe, let’s get started! This Easy BLT Sandwich was all I needed and more! From the flavor to the presentation, I just couldn’t seem to get enough!
The full written recipe is below, but here’s an overview.
Step 1: Make the Spicy Mayo. Whisk all of the ingredients in a bowl. Hold the spicy mayo in the refrigerator.
Step 2: Preheat the Oven. Preheat your oven to 400 degrees. Line a sheet pan with aluminum foil or parchment paper and lay out your strips of bacon.
Step 3: Cook the Bacon. Cook bacon strips in the oven until crispy (10-15 minutes) depending on the bacon's thickness. Turn the strips occasionally for even cooking.
Step 4: Portion out the Remaining Ingredients. While the bacon is cooking, slice your tomatoes and portion out the rest of your ingredients. Heat a cast-iron skillet or sauté pan between medium and medium-high heat. Add your oil and wait.
Step 5: Prepare the Salmon Fillets. Season your salmon fillets on both sides with Cajun Seasoning, salt, and ground black pepper. Make sure to evenly season the fillets. Pat the seasoning on the fillets as well. When the oil is fully heated, add your salmon fillets. Sear on both sides until you get a nice golden brown color.
Step 6: Bake the Fillets. Take the fillets out of the skillet/pan and add them to a lined sheet pan. Remove bacon and let cool. Put the fillets in the oven and cook them until they reach 140 -145°F internally. DO NOT OVER-COOK the fillets. Remove excess fat from the bacon and pat dry. Toast your bread at this time as well.
Step 7: Assemble the Sandwiches & Serve. Begin assembling your sandwiches. Add your spicy mayo to both halves of the bun. Remove salmon from the oven. Add your arugula, tomato slices, avocado slices, salmon fillets, and bacon strips (in that order). Top with the other half of the bun and enjoy!

This recipe is can be made by anyone. It is quick to make and easy to devour! I love eating this sandwich as a quick lunch or light dinner. But, it tastes even better with the right sides to go along with it. There are so many options to choose from!
