  • STEP 2: Add Remaining Ingredients. Add beef stock, garlic paste, and chopped chipotles in adobo to the pot. Return the short ribs, lock the lid, and pressure-cook on high for 1 hour.

  1. Set the instant pot or pressure cooker to the sauté setting and add oil. Pat dry the short ribs with a paper towel. Season the ribs with salt and pepper. Add the short ribs in batches and brown all sides. Then, remove the short ribs and set aside.
  2. Add the beef back into the pot with the beef stock, garlic paste, and the chipotles in adobo sauce. Turn off the sauté mode. Lock the lid and set pressure on high for 1 hour. When done, use Natural Release for 5 - 7 minutes, then release the valve and remove the lid.
  3. Remove the short ribs and shred the meat with a fork. Add ¼ cup of the cooking liquid to the shredded meat if you like.
  4. Preheat a panini press or a skillet over medium heat with non-stick spray. Mix mayo, 1 chipotle in adobo sauce, and 2 tbsp lime juice in a small bowl to make your chipotle mayo. Begin building your sandwiches by buttering your slices of bread. Spread each side with some chipotle mayo.
