New Year, Same Cravings
I don’t know about y’all, but my sweet tooth has been going crazy lately. From cakes to pies to cookies, I have been craving pretty much anything sweet. Typically I get most of it out of my system over the holiday season. But, it seems that the new year has come with additional cravings.
My Homemade Bourbon Peach Cobbler definitely took care of my craving problem. It is such a simple and delicious dessert! You probably have a majority of the ingredients already in your pantry. After just one bite, you’ll want to add it to your collection of dessert favorites!
What iS A Cobbler?
If you have never tried a cobbler before, you’re probably wondering what it actually is. Cobblers have been around for years! It is a dessert with any sort of cooked fruit or savory filling. The dessert has a signature bread-like topping. Either batter, dough, or biscuits are used as the topping. When baked, the fruit juices bubble through the dish creating beautiful asymmetrical pockets. These pockets actually look like a cobblestone road or driveway.
Peach cobbler, in particular, is a Southern Staple. Some people actually make peach cobbler similar to how a pie would look. Think of it as a dessert of its surroundings. People used what they had around them to cook. It is amazing to see how something so simple has turned into a timeless classic. There are so many variations based on location and ingredient availability (i.e. blackberry cobbler, plum cobbler, apple cobbler, etc.)
Bourbon Peach Cobbler Ingredients
For this recipe you will need the following simple ingredients:
Canned Peaches: You obviously cannot make this dessert without this main ingredient. I decided to use canned peaches in fruit juice. I also decided to use all of the fruit juice from the cans. Fresh or frozen peaches can be used for this recipe. I suggest using just-ripe peaches if you decide to use fresh.
White Sugar: White sugar acts as one of the main sweeteners for the dessert. It helps to amplify the natural sweetness of the peaches and their juices.
Brown Sugar: Brown sugar is the second main sweetener. The molasses content from the brown sugar not only adds additional flavor, but it also helps create the beautiful brown color in the fruit filling.
Vanilla Extract: The vanilla extract purely acts as a flavoring agent for the filling.
Lemon Juice: The acid from the lemon juice helps to cut some of the overall sweetness of the dish.
Cinnamon & Nutmeg: These spices add additional warmth. You do not want to add too much of either. Spices can overpower the main ingredients of the dessert.
Corn Starch: The corn starch acts as a thickening agent to the filling’s syrup. Unlike a flour-based roux, corn starch provides a shiny finish to the filling.
Bourbon: Pairing food with alcohol has been done for years. Peaches and Bourbon are one of those pairings that you can never go wrong with. The alcohol cooks off in the cooking process but leaves the amazing flavors of the bourbon in the dessert.
Butter: I decided to use salted butter for this recipe. It adds additional flavor while helping to balance out the sweetness. The butter adds some of the main fat content to the dessert. It makes the topping fluffy and buttery.
All-Purpose Flour: The flour acts as the thickening agent for the batter. The consistency of the batter should be similar to pancake or cake batter.
Baking Powder: The baking powder acts as the leavening agent for the batter. Without it, the batter will not rise and expand.
Salt: Although there is only a small amount of salt in the recipe, the salt helps to balance the overall sweetness of the dessert.
Milk: The milk aids in creating the desired consistency to the batter. You want to mix this completely with the dry ingredients. Be sure not to overmix though.
How to make Bourbon Peach Cobbler
Preheat the Oven. This should always be your first step in baking anything. 350 degrees will suffice for this recipe.
Make the Peach Filling. Add the peaches (with their juices), white sugar, brown sugar, vanilla extract, lemon juice, cinnamon, corn starch, and bourbon to a medium-sized pot.
Cook on medium to medium-high heat until the mixture comes to a boil. Remove from the heat and set aside for later use.
Make the Batter. In a large bowl mix together the all-purpose flour, granulated white sugar, baking powder, salt, and nutmeg. Combine dry ingredients with milk. Mix until smooth.
Prepare to Bake. Add sliced butter to a baking dish or aluminum pan. Place the dish or pan in the oven. Allow the butter to melt. When it begins to bubble, remove it from the oven.
Assemble the Dessert. Add the batter on top of the melted butter. Remember to get as much of the area covered with batter. Spoon the peach filling on top of the batter.
Bake the Dessert. Place the dish in the heated oven for 40 - 45 minutes. When finished, allow the cobbler to rest for 5 minutes. The filling will settle. The cobblestone-like pockets will then be able to be seen. Scoop, serve, and enjoy!
Can I make this Dessert Ahead of Time?
Yes, you definitely can! The good thing about this dessert is that you can heat it up time and time again. I suggest making it the night before your event. The dish will have some time to cool and sit. The flavors will also concentrate while in the fridge.
The next day, all you have to do is heat it in a 350 oven until it is bubbly and delicious. You can also make the filling the day before. The batter can be made the day of. It is a simple process that can be done at any time.
