Raspberry Mint Sorbet


A simple and refreshing frozen treat that is perfect for any time of the year! This Raspberry Mint Sorbet is sweet, creamy, and cooling on the tongue. It is easy to make and even better to eat! What more could you ask for!

Simple, Sweet, and Refreshing

These past few weeks I have been thinking about what recipes I could do for Valentineā€™s Day. From chocolate to strawberries, everything was running through my mind. Those were the easy choices of course, but I wanted something different.

After thinking for a while, I realized that the easiest desserts are sometimes the best. I put together a few simple flavors and ingredients and came up with this Simple Raspberry Mint Sorbet. It might be cold outside, but a cold treat is always in season.

What iS A Sorbet?

Now I canā€™t assume that everyone knows what sorbet is. Sorbet is a frozen dessert that is made from a pureed mixture of fruit, sugar, and other flavorings. That mixture is traditionally churned in an ice cream maker and left frozen.

For this recipe, weā€™re going to skip the churning step. Weā€™re going to use frozen fruit and a blender or food processor to puree the ingredients. Once the mixture starts to have a paste consistency we will freeze, scoop, and then serve it! It is a simple process that takes very little time.

Raspberry Mint Sorbet Ingredients

There are not too many ingredients in this recipe; but, letā€™s still walk through them to understand them. Sorbet is a great alternative to ice cream! You can make sorbet out of pretty much any fruit. Plus, like ice cream, sorbet can be infused in so many different ways!

  • Sugar: I used simple granulated sugar for this recipe. It makes up half of the simple syrup. This will also add some additional sweetness to the sorbet.

  • Water: In order you need to make the simple syrup, you're going to need water.  

  • Mint Leaves: Fresh herbs are needed whenever you are trying to infuse something. They hold a lot of natural flavors. Plus, the mint will make the sorbet even more refreshing.

  • Pure Mint Extract: This mint extract is optional. I just wanted an extra mint flavor in mine. Always get good quality extracts as well. They make a big difference. 

  • Frozen Raspberries: You canā€™t have Raspberry Mint Sorbet without raspberries! If you cannot find frozen ones, buy them fresh and freeze them on a lined sheet pan or Ziploc bag.  

  • Lemon Juice: The lemon juice helps to cut some of the sorbetā€™s sweetness. As I always say, fresh is better!

How to make Raspberry Mint Sorbet

Yā€™all do not understand how good this sorbet turned out! You get the sweet raspberry flavor paired with the refreshing mint flavor.

One scoop just wasnā€™t enough! This is the perfect dessert when you want something light! It can also be a palate cleanser between meals.

The ingredients are as simple as it gets which will make you want to make it even more!

The full written recipe is below, but hereā€™s an overview.

  • Step 1: Make Simple Syrup. Combine sugar, water, mint leaves, and pure mint extract in a small saucepot. Heat the mixture on medium-high. Allow the mixture to come to a boil. 

  • Step 2: Allow the Mint Leaves to Steep. When the mixture starts to boil, remove it from heat. Allow the mint leaves to steep for 15 - 20 minutes. Remove the mint leaves and allow the simple syrup to completely cool.

  • Step 3: Crush the Raspberries. Add the frozen raspberries to a blender or food processor. Pulse the frozen raspberries until they become tiny bits.

  • Step 4. Pulse until Smooth. Add lemon juice to the blender or food processor. Slowly add in the simple syrup 1 to 2 tbsps at a time. Pulse the mixture each time the simple syrup has been added.  Only about 4 - 5 tbsp will be needed. 

  • Step 5: Freeze the Sorbet. The raspberries should turn into a slight paste. Adjust with more simple syrup if necessary. Remove the paste from the blender or food processor, and add to a metal container. Allow the sorbet to sit in the freezer for 2 - 3 hours or overnight.

  • Step 6: Scoop, Serve, and Enjoy! When ready to serve, scoop into bowls or glasses and enjoy! You can also garnish the sorbet with fresh raspberries and mint leaves.

Can I make this Dessert Ahead of Time?

Yes, you definitely can! The good thing about this dessert is that you can make a bunch of it and store it in the freezer. It will hold in the freezer for up to 3 weeks before it begins to get overly icy.
