An Upgrade OF the Classic Biscuit!
It’s nothing like having a fresh, homemade biscuit in the morning or alongside your dinner! If you ever find someone who can make delicious homemade biscuits, you have found a great person! This time around we’re going to take the traditional buttermilk biscuit recipe up a few notches.
My Easy Bacon Chive & Cheddar Biscuits are the upgrade you didn’t know you needed! They are buttery, soft, and full of layers. Oh, and you can’t forget about the crispy bacon, fresh chives, and cheddar cheese! I had to stop myself from eating all of them. But, it’s ok if you do!
Tips For Making The BEST Biscuits
So, if you love biscuits as much as I do, you know that they can be tricky to make at times. Biscuits require certain ingredients, times, and procedures in order for them to come out delicious.
I like biscuits that are mile-high, flaky, and buttery! Below are a few of my favorite tips to make the best biscuits.
Cold Ingredients are Key! For biscuits, the colder the butter the better. The butter helps to create those beautiful layers inside. You do not want melted fat in the dough. The butter is also easier to grate and crumble when it is cold.
Allow the Biscuits to Rest. I like to put my cut biscuit dough in the refrigerator before baking. This allows the dough to chill and maintain the shape that it has been cut into.
Use a High Temperature. In order for the biscuits to rise the most in the oven, the oven temperature needs to be around 400 degrees or a little higher. If you are afraid of the biscuits burning at this temperature, turn down the temperature to 375 degrees after the initial rise.
Fold the Dough. The flaky layers that you see in so many baked goods come from folding the dough over and again. The butter is folded throughout the dough. This will create layers of fat that will melt within the biscuit creating an amazing final product.
Bacon Chive & Cheddar Biscuits’ Ingredients
The ingredients are pretty simple in this recipe; but, let’s still walk through them to understand them.
All-Purpose Flour: The flour acts as the binder for the biscuits. It is one of the main ingredients that will help create and stabilize the biscuits. For this recipe, there is no need to sift the flour.
Baking Powder: You always need some form of leavener for baked goods. The baking powder makes these biscuits rise really high! The way that they initially puff up in the oven is crazy.
Salt: I added a little salt into the recipe to add some additional flavor to the biscuits. Be careful though. Too much salt will make the biscuits overly salty which is not the goal at all. A little salt in baked goods always goes a long way.
Sugar: The sugar helps to balance out the saltiness from the kosher salt and the salted butter. You can taste a hint of sweetness after you taste the inside of the biscuits. But, it is only a slight taste.
Butter: You need some type of fat component whenever you are making a baked good. Butter or shortening are some of my favorite fats to use for biscuits. They help to form flaky layers throughout the biscuits. Salted or unsalted butter will work fine for this recipe.
Bacon: Thick or regular-cut bacon will work great for this recipe. As long as you get the bacon nice and crispy, you’ll be just fine! The extra fat from the bacon will make these biscuits taste even better.
Cheddar: The cheese is the cherry on top of these biscuits! I used a simple sharp cheddar. It adds some creaminess while adding a slight bite to the biscuits. Try using other types of cheese such as white cheddar, cheddar jack, mild cheddar, or a Mexican-Style blend!
Fresh Chives: Chives have a nice mild flavor of chives similar to both onions and garlic. The flavors work great with the cheese, bacon, and butter in the biscuits as well. The green also gives the biscuits a nice pop of color.
Buttermilk: Buttermilk is probably my favorite dairy ingredient to use for biscuits! It is full of fat and extra flavor. This is the only wet ingredient you will be using for the recipe. If you cannot find buttermilk, take regular whole milk or half & half and add 1 - 2 tbsp of white or apple cider vinegar.
Egg: The egg is used for a simple egg wash (egg plus buttermilk) that goes on top of the biscuits before they go into the oven. The egg wash helps to give the biscuits a golden brown color.
How to Make Bacon Chive & Cheddar Biscuits
Now that we have gotten the ingredients out of the way, let’s get into actually making these bomb biscuits! Biscuits are simple to make, but you have to make sure you do not overwork the dough.
After eating one of these, I had to eat another one! The steps are pretty simple which means that you will be eating before you know it!

Step 1: Preheat the Oven & Cook the Bacon. Heat the oven to 400° F. Line a baking sheet with parchment paper or spray with nonstick baking spray. Hold the pan for later use. Cook your bacon until crispy over the stove in a non-stick pan or in the oven, making sure to turn every so often. Drain the bacon of any excess oil and coarsely chop.
Step 2: Cut the Butter into the Dry Ingredients. In a large bowl mix together flour, baking powder, salt, sugar, bacon, fresh chives, and cheddar cheese. On the large hole side of a grater, grate the cold butter into the flour mixture. Then, with a fork or pastry cutter, cut the butter into the flour mixture. The finished product should look like coarse crumbs. You can also do this by adding the butter and flour mixture into a food processor. Pulse the mixture until it reaches the desired consistency.
Step 3: Add the Wet Ingredients and Mold. Add 1½ cups of cold buttermilk into the mixture. Mix with your hands or a wooden spoon. When the dough begins to form, move to a floured surface. Mold the dough into a ball. If necessary, add more flour to the surface to keep the dough from sticking. Make sure not to overwork the dough.
Step 4: Roll & Fold the Dough. With a rolling pin, roll the dough into a rectangle that is ¾ of an inch thick. Fold the dough in half and roll the dough back into the larger square. Repeat the process two more times adding more flour when necessary.
Step 5: Cut the Biscuits. With a biscuit or cookie cutter, cut the biscuits. Gather the remaining dough and flatten again to cut more biscuits. Transfer the biscuits to the lined sheet pan and refrigerate for 15 minutes. While the biscuits are resting, make the egg wash by mixing 1 egg and the remaining buttermilk together.
Step 6: Bake the Biscuits & Serve. Brush the biscuits with the egg wash and bake for 17 - 20 minutes or until golden brown and flaky. Remove from the oven and brush the biscuits with some additional melted butter. Serve hot and enjoy!
