If you have never eaten or heard of a breakfast hash, I’m here to tell you that you have been missing out! Hashes are comprised of pretty much any ingredient that you want! But, the main ingredients are usually potatoes, onions, peppers, and sometimes meat.
Hashes are one-pan meals or side dishes that work great for almost any time of the day! My Chorizo & Sweet Potato Hash is definitely that and so much more! It’s hearty, comforting, and full of delicious flavors!
Tips For Making a great hash
A good hash will get you full all on its own! You literally can combine pretty much all of the food groups in one. I love how versatile they can be. Here are a few tips that will help you make the best hash ever:
Make the Ingredients all the same size. The hash is made with different ingredients with different cooking times. Keeping all of the ingredients around the size will help with even cooking overall.
Sear the Ingredients Well! The ingredients should always be seared until browned. This makes the hash even better. The natural sugars in the ingredients get too brown creating an amazing flavor throughout the hash.
DO NOT GET RID OF THE FAT! The fat from the chorizo is so flavorful! You are going to want to cook the other ingredients in it. It makes the hash even better.
Try Par-Cooking the Potatoes. Par-cooking a few hours or the day before will save you some additional time. Steam the potatoes in a steamer or boiling salted water until they are about 1/4 to 1/2 of the way cooked. Cool them completely and then use them in the hash.
Chorizo & Sweet Potato Hash Ingredients
The ingredients in this recipe are pretty simple and easy to find; but, let’s still walk through them to understand them.
Chorizo: I love me some chorizo! It is a pork sausage that is dry-cured. It has a salty, smoky, and slightly sweet flavor. There are so many different versions that you can use. Plus, there are also vegan and vegetarian varieties.
EVOO: The extra virgin olive oil is simply used for sauteing the vegetables and potatoes. The ingredients are also cooked in the fat rendered from the chorizo.
Onions: I used about 1 cup of diced onions. I also used a mixture of yellow and red onions. The red onions are slightly more potent in flavor which adds to the overall flavor of the hash.
Italian Seasoning & Sage: Herbs and potatoes have always been great friends. They work with the starches in the potatoes so well. Plus, hashes are usually rustic and herbaceous.
Sweet Potatoes: Now you can’t have a hash without potatoes! I used about 2 cups of peeled and diced sweet potatoes. The potatoes are cooked just until they are soft.
Garlic: I put a little minced garlic in most of my recipes. It adds just the right amount of bold flavor to any dish. Plus, garlic and potatoes always go great together.
Paprika & Chili Powder: I added these two for some additional smokiness and spice. They both compliment the smokiness of the chorizo really well!
Italian Seasoning & Sage: Herbs and potatoes have always been great friends. They work with the starches in the potatoes so well. Plus, hashes are usually rustic and herbaceous.
Stock or Broth: Adding a small amount of stock or broth will help with cooking the potatoes. It helps them to steam a little. You don’t want to add too much or the hash will become very mushy.
Greens: The greens added a pop of color to the dish. Plus, they add some extra fiber and texture to the hash. Spinach or kale will work just fine.
Eggs: Hash with fried or sunny-side-up eggs are a must for me. This is completely optional though. But, the eggs make this hash a perfect one-pan breakfast!
Scallions: For garnishing, I added some chopped scallions. They are not necessary but add some additional color to the hash.
Kosher Salt & Ground Black Pepper: This recipe is seasoned to taste with kosher salt & ground black pepper. This way you can match the seasoning level to your dietary needs.
How to Make Chorizo & Sweet Potato Hash
Now that we have gotten the ingredients out of the way, let’s get into actually making this really easy breakfast hash! Hashes are the perfect one-pan meal that works great for breakfast and even dinner!

Step 1: Brown the Chorizo. In a large skillet over medium-high heat, add the ground chorizo and brown (about 6 - 8 minutes). When browned, transfer the sausage to a bowl and set aside. Leave the fat from the chorizo in the skillet.
Step 2: Add the Vegetables & Potatoes. Add the extra virgin olive oil, chopped onions, chopped peppers, and diced sweet potatoes to the same skillet. Cook for 12 - 15 minutes or until the potatoes and vegetables are tender. Make sure to stir occasionally.
Step 3: Season the Hash. Add the minced garlic, paprika, Italian seasoning, ground sage, and chili powder. Mix until fully combined.
Step 4: Add the Chorizo & Greens. Add chorizo and spinach or kale. Cook for another 8 - 10 minutes, or until chorizo is fully cooked. Make sure to stir occasionally.
Step 5: Add the Stock or Broth. Add the chicken or vegetable stock or broth. Cook until the liquid evaporates (about 2 minutes).
Step 6: Season to Taste with Salt & Black Pepper. Season the hash to taste with kosher salt and ground black pepper. Remove from the heat.
Step 7: Garnish & Serve with Eggs. If using eggs, fry up 4 - 6 eggs in a separate skillet to serve on top of the hash. Garnish with a little minced parsley or chopped scallions for color. Serve hot and enjoy!
