Roasted Balsamic Brussels Sprouts
An easy and flavorful side dish that is sure to make any meal great! These Roasted Balsamic Brussels Sprouts are deliciously crispy, tossed with bacon, and drizzled with a balsamic reduction. They are simple to make and easier to devour! You will never want to eat Brussels sprouts another way.

Out of all of the vegetables out there, Brussels Sprouts have become one of my top three favorite vegetables. They are so easy to fix and can be made in so many ways. I do not know why I thought these were disgusting as a kid. When made the right way, I can eat them alone as a meal.
I also love anything involving Balsamic Vinegar. So, I decided to put two of my favorite ingredients together. My Roasted Balsamic Brussels Sprouts literally made my mouth water. I could not stop eating them. To make them even better, I roasted them with some diced thick-cut bacon. It was heaven on a fork!
Tips for Making the Best Roasted Brussels Sprouts
These Brussels Sprouts are very simple and easy to make! Here are a few tips to make them even better.
High Temperatures are Necessary! The best way to get the crispiest roasted sprouts is to use a high temperature. 400 degrees and above is where you want to stay. 400 and above is the best for roasting. I decided to use 425 degrees for this recipe. The oil will also assist in creating crispy sprouts.
The Less Moisture The Better. Make sure that the sprouts are completely dried off before you roasted them. A lot of moisture will cause the sprouts to steam rather than roast. They will become soggy and not crispy. The goal is to make crispy sprouts with tender centers.
Check the Inside of Each Sprout. Brussels sprouts are little baby cabbages. You want to make sure that you check inside the sprouts for any small insects after you cut them.
Roasted Balsamic Brussels Sprouts Ingredients
The ingredients are pretty simple in this recipe; but, let’s still walk through them to understand them. You do not need many ingredients in this recipe which is perfect when trying to save time!
For this recipe you will need the following simple ingredients:
Brussels Sprouts: You have got to make sure you have the main ingredient. Make sure that they are all washed, trimmed, and halved. The larger the sprout the longer it will take to roast.
EVOO: I love extra virgin olive oil when roasting Brussels sprouts. I love the added flavor that they give. But, grapeseed or vegetable oil will work just fine as well. The oil plus the high cooking temperature will make the sprouts delicious and crispy.
Bacon: I used thick-cut bacon for this recipe. It has a little bit more fat which helps with making the sprouts crispy and flavorful. But, the bacon is totally optional. The EVOO will work just fine if you decide to not use bacon.
Salt: I used good old kosher salt for this recipe just like I do for the rest of them. I only used about a tbsp. If you are not using the bacon, the salt level will be fine as well.
Ground Black Pepper: The ground black pepper added the spice that I needed. It went really well with the sweet and tangy balsamic reduction.
Onion Powder & Garlic Powder: I put this stuff on everything! They both add so much flavor without being overpowering on the sprouts.
Balsamic Vinegar: This is probably my favorite vinegar besides apple cider vinegar. It’s bold and very fragrant. When this vinegar reduces, the natural sugars inside of it caramelize beautifully. A basic balsamic vinegar is perfect for this recipe. You do not have to break the bank.
Brown Sugar: I added the brown sugar to the balsamic vinegar in order to make the reduction. You can use other sweeteners such as white sugar or orange juice as well. The main goal is to allow the sugars to reduce.
How to Make Roasted Balsamic Brussels Sprouts
Now that we have gotten the ingredients out of the way, we get into actually making these simple and easy sprouts! I love how simple this recipe is.
Plus, you will never make sprouts the same way again!

Step 1: Always Preheat the Oven First! Preheat the oven to 425°F. Make sure that the Brussels sprouts are properly cleaned before cutting and roasting.
Step 2: Toss the Ingredients Together. In a large bowl, toss together the Brussels sprouts, diced bacon, EVOO, salt, ground black pepper, onion, powder, and garlic powder.
Step 3: Transfer to a Sheet Tray. Transfer the mixture to a half sheet tray sprayed with non-stick spray or lined with aluminum foil.
Step 4: Roast the Sprouts. Roast for 30 - 35 minutes or until the Brussels sprouts are brown and crispy.
Step 5: Make the Reduction. While the Brussels sprouts are roasting, combine the balsamic vinegar and brown sugar in a small saucepan. Allow the mixture to reduce to a syrup-like consistency over medium-high (about 8 - 10 minutes).
Step 6: Drizzle the Reduction. Remove the Brussels sprouts from the oven and drizzle the balsamic reduction on top. Toss and serve the sprouts hot. Enjoy!
