Hot Potato! Hot Potato!
Whether they are fried, mashed, or scalloped, potatoes have always been my favorite side dish. They can be made in more ways than I can count. Plus, they are an inexpensive way of adding some starch into your diet.
With all of the ways to make potatoes, have you ever had them smashed? If you haven’t, I highly suggest that you do! They are a rustic twist on the traditional roasted potato. My Crispy Golden Smashed Potatoes will show you why I love these potatoes so much.
Tips for Making the Best Smashed Potatoes
These potatoes are as easy as a recipe can get! Here are a few tips to make them even better.
Make them Crispy! To make the potatoes extra crispy, smash them thinly similar to that of a pancake. The edges will crisp up beautifully! Plus, they will cook faster. Remember to use enough fat for both flavor and crispiness.
Season Well! Potatoes are nothing without some good salt. I decided to use kosher salt rather than table salt. Do not be afraid of seasoning the potatoes. Also, have fun with the potatoes! The seasonings listed in the recipe below are not the only ones you can add. Some fresh herbs would be great as well!
High Temperatures are Necessary! The best way to get the crispiest potatoes is to use a high temperature. 400 degrees and above is where you want to stay. 400 and above is the best for roasting. I decided to use 425 degrees for this recipe.
Crispy Golden Smashed Potato Ingredients
The ingredients are pretty simple in this recipe; but, let’s still walk through them to understand them. Most of the ingredients listed are probably already in your pantry. That’s the great thing about this recipe!
For this recipe you will need the following simple ingredients:
Golden Potatoes: I used mini golden potatoes for this recipe. This recipe will also work for mini red and purple potatoes. Some potatoes grow a little larger than others which will require a longer cooking time. Make sure that they are scrubbed and rinsed properly as well.
Butter or Extra Virgin Olive Oil: You’re definitely going to need some type of fat for this recipe. The fat will give the potatoes their crispness and enhance their final golden brown color. I decided to use a mixture of both butter and extra virgin olive oil. But, one will do just fine.
Garlic Powder: I really wanted some garlic flavor in this recipe. So, I decided to add some garlic powder. This way I didn’t have to worry about garlic burning in the oven.
Onion Powder: Onions and potatoes are always a great pair. But, I just wanted the flavor for this recipe. I decided to mix some onion powder into the oil and butter mixture as well for the added flavor.
Salt: I kept the seasoning simple with this recipe. I used good old kosher salt. I always say be careful that you do not use too much kosher salt. It is a lot more powerful than regular table salt. But, do not under-season the potatoes as well.
Ground Black Pepper: The ground black pepper adds a little spice to the potatoes. A quick sprinkle over each potato is all that you need.
Fresh Parsley: Fresh parsley is optional. I used it to add some color to the potatoes. I roughly minced the parsley. This is a rustic side dish. There is no need to be too fancy.
How to Make Crispy Golden Smashed Potatoes
Now that we have gotten the ingredients out of the way, we get into actually making these easy potatoes! I love how simple this recipe is.
Plus, it makes eating regular old roasted potatoes a little bit more fun!
The full written recipe is below, but here’s an overview.
Step 1: Always Preheat the Oven. This will save you so much time later on when it comes to roasting the potatoes. 425°F will do just fine for this recipe.
Step 2: Steam the Potatoes. Add the potatoes to a large pot and cover them in cold water. Add 1 tbsp salt. Bring the pot to a boil. Allow the potatoes to boil for 20 minutes or until soft & tender. If the skins are torn, the potatoes are still fine.
Step 3: Drain the Potatoes. Allow all of the water to drain from the potatoes through a colander. Let the potatoes rest for about 5 minutes.
Step 4: Prep for Roasting. While the potatoes are resting, line a half sheet pan with aluminum foil or spray with non-stick spray. Place the potatoes on the sheet pan.
Step 5: Smash the Potatoes. Smash the potatoes with the palm of your hand or a masher making sure to keep the potato together. Do not allow the potatoes to crumble completely.
Step 6: Brush with Fat & Season. Melt the butter. Add the garlic and onion powders. Take a pastry brush and brush the tops of the potatoes. Season with salt and ground black pepper.
Step 7: Roast the Potatoes. Roast the potatoes for 30 minutes or until the potatoes' edges are crisp.
Step 8: Season, Garnish, and Serve! Remove the potatoes from the oven. Add more seasoning if necessary. Garnish with minced parsley and serve hot. Enjoy!
